I have done a full stock check and uploaded quantities to StkQty in Product csv file. I don't sync my iPad with any back office systems. How can I ensure that as I input orders and upload orders to cloud that my stock will reduce by the amount on the order? Also is there a way that quantities sold can automatically be added to give a SalesYTD figure without syncing to a back office system?

If you're uploading orders to your cloud account then tracking the available quantity is only really an option when interfacing to a back-office system
There are configuration options for the available stock calculation to take into account sales figures from both live orders on the iPad and live orders in your cloud account.
However, the system assumes that the "on sales" figure in your product data upload is up-to-date and will only take into account the figures from live orders that were either uploaded to your cloud account after your product data was last processed or are marked for exporting to a back-office system but have yet to be exported.
The "sales YTD" figure comes straight from the product data uploaded to your cloud account. It is just displayed for information purposes - no calculations are made with this figure based on sales activity within SP itself.

Thank you very much for your prompt feedback. Unfortunately I work on my own and am not big enough to require an all singing & dancing back office system......yet.
I currently use Quick Sale for my invoicing direct from my iPad. Fortunately it calculates stock availability and sales to date per customer, per month, per item etc based on items invoiced. I guess I was hoping for the impossible to think I would finally be able to manage presentation, stock & invoicing from one app. ie Sales Presenter.

The only way that you're going to achieve an accurate stock figure without a back-office system is to keep orders live on the iPad itself rather than uploading them to your cloud account.
Sales Presenter can be configured to automatically place new orders on hold as they're created. This prevents them from being accidently uploaded to your cloud account and they will therefore remain part of your local "on sales" figure within Sales Presenter.
Whenever you next do a stock take and refresh the stock figures in your product data you would need to take all the existing orders in SP off hold then upload them to your cloud account to remove them from the local sales figures.
You'd need to turn on the configuration option to include figures from live orders on the iPad in the on sales figure within Sales Presenter.
You'd need to turn off the configuration option to include figures from orders on your cloud account.
