Is there a way of flagging/marking latest products in the catalogues that are already created? I see there is a "latest products" catalogue, but i assume an additional catalogue is created in the list of catalogues.

There is no way of flagging these at the moment. If enabled, the Latest products catalogue does indeed appear at the top of the list of catalogues.
We'll add this request to our development wish list. In the meantime you can always upload images for your new products that have some sort of visual indicator in them.
