How do i make use of the Latest Product and the Clearnace products catalogues? Do they need to pick up data from somewhere in X-Suite?

These dynamic catalogues are managed via the Configuration->General section of your cloud account.
You can specify a title to be displayed on the iPad for these catalogues. By default, the titles are blank which means that the catalogues aren't being used. The presence of a "non-blank" title automatically enables the catalogues.
For the clearance catalogue, Sales Presenter will show any products that have a non-zero clearance price recorded against them.
For the latest products catalogue, you also configure a number of days, months or years to go back to. Sales Presenter will show any products that were created on the iPad on or after this date. Please note that is the date that the product was downloaded to the iPad, not the date it was created in your back-office system.

Yes, if you check the product maintenance screen in X~Suite you'll see that you can set up a clearance price against a product.
This is one of the product fields that is automatically uploaded to your cloud account by X~Suite.
