If we chose to upload non-live products to the Cloud so that they appeared on back orders from what i understand they will appear in the catalogues too. Would there be a way of noting the non-live products or would they all appear the same?

The cloud has no concept of non-live products. There is a Do Not Sell option available on the Products file type which will stop products from being added to an order on Sales Preseter and CloudCart if set.
One of my colleagues will be in contact with you shortly to explain how the Do Not Sell option can be set up in X~Suite.
