I think i remember in a previous update there was the mention of an agent having all of the customers available while at an exhibition. Do i just need to change the rep restriction before the exhibition and then change it back after?

Yes, the way that you would need to do this at the moment is to simply lift the rep restrictions then re-apply them afterwards.
The change that was made in a previous update was to download all customer information to all iPads regardless of any rep restrictions (rather than just the information relating to the reps customers) then mark the records as viewable or non-viewable by the rep as appropriate. This change allows us to implement a single cloud configuration setting at some point to switch in and out of "exhibition" mode without having to change any of the rep restrictions.
