Can you please check why I can't add any lines to an order? When I click the green Plus, nothing happens?

We can see that you have set the QtyPerCarton field to "12" for some of your products in your Products CSV file. The issue you have described will only be occurring for products that do not have a value in this field. Since you've configured SalesPresenter to order in cartons, the field must contain a valid value for each of your products.
We can also see that the "Default Value (If Not Mapped)" option for the QtyPerCarton field in the Field Mappings section of your cloud account has also been set to "12". Please note that the default value is not being utilised for you at the moment as the field is also mapped from your file.
To resolve this you should update your Products CSV file to correct the values for the QtyPerCarton field. Alternatively, if this value will always be the same for all of your products, you can simply remove the mapping for the field in the Field Mappings section of your cloud account which would then utilise the default value of "12" that you've specified there.

Can you please let me know why the + and - buttons are not showing on my products

The reason you cannot see the + and - buttons is due to you being in the Product Catalogues area of SalesPresenter. This area simply shows which products are available in your system.
To create an order you will need to be in the Customers area and click Create New Order for the customer.
