How do we show an out of stock on the Sales Presenter without it effecting the order history?

Not too sure what you mean by without it affecting the order history.
There are options in the Configuration->General section of the cloud account which allow you to specify whether SP takes into account the quantities on live orders (both in SP and on the cloud) when calculating the available stock figures.
