What is the logic behind the search function for Customers? Whether I use all the filters or just the company name filter I receive results that are not even related to the search criteria I am using.
For example, if I use CAN to search for customers that start with those letters it returns Armstrong Garden Centers which is does not start with these letters nor does it contain this string of letters.

The search results will contains records that contain the search criteria anywhere in any of the fields you're filtering on.
Checking your data, Armstrong Garden Centers has the word "Canada" in their company name so searching for "can" will find this account.
