Hi do I have to populate all fields on the Product csv template or can I delete the columns we don't need at the moment, if so can I add them later if needed.

You only need to populate and map fields that you require. It is safe to delete any columns from the template files that you do not need.
On the field mappings screen there may be specific notes against one or two fields to say you need to provide a default value on that screen if you're not mapping that field.
